Moroccan Harcha (Semolina Flatbread)
Ingredients (makes 4–6 harchas): 2 cups fine semolina ½ tsp salt 1 tbsp sugar 1 tsp baking powder ¼ cup melted butter ¾ cup milk (or more if needed) Extra semolina for dusting Instructions: Mix dry ingredients In a large bowl, combine semolina, salt, sugar, and baking powder. Add butter Pour in the melted butter and mix with your fingers until crumbly, like wet sand. Add milk Gradually add milk and knead lightly until you get a soft dough that holds together (not sticky). Shape Divide the dough into small balls, flatten them into discs about ½ inch thick. Dust with semolina. Cook Heat a non-stick skillet over medium heat. Cook each harcha for 4–5 minutes per side, until golden brown. Serve warm Serve with honey, jam, or cheese. Best enjoyed with Moroccan mint tea!
