Moroccan Fekkas Recipe (Sweet Biscotti-Style Cookies)
Ingredients: 3 cups all-purpose flour ¾ cup sugar ½ cup vegetable oil ¼ cup orange blossom water (or milk) 3 large eggs 1 tsp baking powder 1 tsp vanilla extract 1 pinch of salt 1 cup chopped almonds (toasted) 2 tbsp sesame seeds (toasted) Optional: handful of raisins or anise seeds Instructions: Mix wet ingredients In a large bowl, whisk together eggs, sugar, oil, vanilla, and orange blossom water. Add dry ingredients Mix in flour, baking powder, and salt gradually until a soft dough forms. Fold in almonds, sesame seeds, and any optional ingredients. Shape the dough Divide into 2 or 3 logs about 1.5 inches thick. Place on a parchment-lined baking sheet. First bake Preheat oven to 350°F (180°C). Bake logs for 20–25 minutes until firm and lightly golden. Cool and slice Let logs cool for 10 minutes, then slice diagonally into thin pieces (~½ inch thick). Second bake Return slices to the baking tray, cut side up. Bake again at 300°F (150°C) for 10–15 minutes until crisp and golden. Cool completely Let cool and store in an airtight container for up to 2 weeks.
