Ingredients (makes ~12 small pancakes): 1 cup fine semolina ½ cup all-purpose flour 2½ cups warm water 1 tsp active dry yeast 1 tsp baking powder ½ tsp salt 1 tbsp sugar (optional) Instructions: Prepare the batter In a blender, combine semolina, flour, warm water, yeast, baking powder, salt, and sugar. Blend for 1–2 minutes until smooth and well-mixed. Let it rise Pour the batter into a large bowl. Cover and let it rest in a warm place for 30–45 minutes, until bubbly and slightly risen. Cook the beghrir Heat a non-stick pan over medium heat (no oil needed). Stir the batter gently, then pour a ladleful onto the pan. Cook on one side only — holes will start to form as it cooks. When the top is no longer wet and the bottom is lightly golden, remove. Serve warm Mix melted butter with honey and drizzle generously over beghrir before serving.
